I have completed 5 marathons (Miami Marathon 2008 & 2009, Philadelphia Marathon 2011, New York City Marathon 2013, Great Wall of China Marathon 2014) and two overnight long-distance relay races. I love endurance events because even though they may not be traditionally "fun", they are unpredictable, exciting, and challenging. I enjoy the feeling I get when I accomplish something new that I didn't think I could do.
Most recently In January 2017, my husband and I completed a 600 mile, 11 day bicycle trip around the entire island of Taiwan. We climbed thousands of meters of elevation winding through the mountainous coast. It was an unforgettable experience (both the views, and the sore legs!).
Outside of dietetics and all things food, my other passions are language learning and staying active. Since 2012, I have been taking Mandarin Chinese classes - first, as an after-work activity in New York City, and most recently, in an intensive format in Taipei, Taiwan. As a first-generation Taiwanese-American, I use food and music to connect with my extended family, but as I've gotten older I've found a deep desire to overcome some of the language barrier that existed (I couldn't read or write!). In December of 2016, I was placed in Level 3 (Intermediate Listening Comprehension and Reading) Mandarin Chinese by the Test of Chinese as a Foreign Language. I look forward to continuing to develop this skill and hope to use it in my profession one day.
