Hello there, I'm Eling.
I love food and its role in individual wellness. But even more than that, I have always been interested in population-level health, and truly believe that healthy, affordable food is one of the cornerstones to achieving vibrant, stable, and physically and economically healthy communities. I want to become an RD and direct programs that address both hunger and poverty.
I am currently in my last semester as a distance student in Kansas State University's Didactic Program in Dietetics, and hold an MPH from the Yale School of Public Health. I worked for three and a half years in New York City's non-profit sector, and also have financial and food service experience working with one of the city's top-rated mobile food trucks (a total dream of mine!).
Most recently, I spent a year and a half living in Taipei, Taiwan where I enjoyed soaking up all there is to know about Taiwanese eating culture and their take on health and nutrition. While there, I brought my Mandarin Chinese to an upper intermediate level, continued my DPD courses, and am most proud of getting an after-school nutrition and cooking class off the ground at a local elementary school.
Outside of my interest in food and nutrition, I also enjoy cruising on my bike, studying Chinese, boxing, and finding sunny coffee shops. I've run five marathons and haven't ruled out one more.
